How to prepare lettuce?

First, the lettuce should be prepared and eaten when it is still fresh. The best is to get it from Gina Lettuce freshly harvested and eaten on the same day.

If you have the time and the ingredients in house, you should make your own dessing. What you need is a fine oil (corn oil or similar), kalamansi juice (or vinigar) and salt. What you can add is pepper, onions, maybe garlic or even some sugar, mustard, sour cream, mayonnaise, yogurt or what you like. You always start with the fine oil to which you mix the other ingredients. A hint: Prepare the dressing one hour before serving it, keep it at room temperature (but don't mix it already with the lettuce).

What is Lettuce?

There are many different lettuce varieties. The Leaf Lettuce has the most tender varieties, among them Lollo green and Lollo red. The Cos Lettuce familiy is more crispy. Most famous is Romana (the lettuce from which a Mexican restaurant owner created the Cesar's Salad). In cooler countries, Cabbage Lettuce is the most important family. Endivia has a stronger, slightly bitter taste. A delicate and piquant specialty is Arucula which is a lettuce-like herb.

Dill (leaves, flowers and fruits) is the classical herb for cucumbers and not too spicy pickles. Fresh dill leaves give a fine taste to steamed fish dishes or to salad dressings.
